Black Garlic Spring Rolls

Ingredients:

  1. black garlic * 8 pieces

  2. pizza cheese * 40g

  3. spring roll wrapper * 4 pieces

  4. smelt fish * 4 

  5. Perilla * 4 pieces 

Methods:

  1.  Grab a piece of spring roll wrapper

  2.  Put all the ingredients on top of the wrapper

  3.  Wrap up tightly

  4.  Bring another pot of frying oil to 180C

  5.  Deep fry srping roll till cripsy and golden on the outside and take out.

  6.  Serve hot 

Black Garlic Miso Soup

Ingredients:

  1.  Tofu * 1/4 piece

  2.  Dried Sea Weed *2g

  3.  Miso * 2 spoonful

  4.  Stock * 300 cc

  5.  Bean Curd * 1/2 piece

  6.  Scallion * appriporiate amount

  7.  Black Garlic * 1 piece

Methods:

  1.  Soak dried sea weed into water, leave for minutes.​​

  2.  Cut tofu into small squares 

  3.  Finely slice bean curd to several slices

  4.  Chop scallion 

  5.  Crush black garlic to paste

  6.  Bring a pot of stock to boil, add in tofu, sea weed, bean curd slices and black garlic paste.

  7.  Put scallion on to of miso soup, serve hot.

Italian Mackerel with Black Garlic

Ingredients:

  1. Mackerel * 1/2 piece

  2. Flour * 2 spoonful

  3. Cooked tomato * 1 

  4. Olive Oil * 1 spoonful

  5. Cooking Wine * 1 spoonful

  6. Broccoli * 50g

  7. Salt and Pepper to taste

  8. Onion * 1/2 piece

  9. Black Garlic * 20g

  10. Lemon Juice * 1 spoonful

  11. Boiled Egg * 1 piece

Methods:

  1. Bring a bowl, put in chopped mackerel, flour, salt and pepper, Mix well.

  2. Bring a pot of water to boil, put in tomato for minutes then take out peel off the skin and chop.

  3. Chop black garlic and onion.

  4. Heat up a pan, put in olive oil and pan fry mackerel to gold and brown. Take out and set aside.

  5. Prepare another pan, fry chopped onion till brown.

  6. Combine step 1 and 2 with black garlic, put in frying pan add in lemon juice, a bit of cooking wine and put the lid on to simmer for 3-4 mins.

  7. Add in broccoli to finish.

  8. Transfer mackrel to plate, drizzle soup from the pan and put boiled egg to garnish.
